Cold Salmon w/ Tarragon Sauce

Salmon Ingredients

(For 6-8 servings)

2 pounds salmon fillet

1/4 cup butter, melted

2 large cloves garlic

Dried tarragon

4 thin slices of lemon

Salt & freshly ground pepper to taste

Directions

Preheat oven to 375°F

Thoroughly wash salmon & pat dry with paper towels

Spray baking pan or dish with Pam or line w/ aluminum foil

Lay whole salmon fillet in baking pan or dish, skin side down

Place butter & pressed garlic in a small bowl, melt mixture in microwave

Remove from microwave & stir, then evenly spoon mixture over salmon

Sprinkle tarragon on salmon to taste

Place lemon slices evenly on top of salmon

Bake 20-25 min, checking for doneness

Let salmon cool for several minutes, then transfer with spatulas onto serving dish

Cover with plastic wrap & place in refrigerator for at least 2 hours before serving cold

When ready to serve, remove lemon slices & cut salmon fillet into desired size pieces

Plate & drizzle Creamy Tarragon Sauce over salmon

Creamy Tarragon Sauce

Ingredients

½ cup low-fat plain yogurt

6 tablespoons reduced-fat or regular mayonnaise

1 teaspoon dried tarragon

1 tablespoon lemon juice

1 tablespoon water

2 teaspoons Dijon mustard

salt & freshly ground pepper to taste

Directions

In bowl, whisk all ingredients together thoroughly

Refrigerate for 2 hours before served (you can make it ahead & refrigerate for up to 3 days)
