Trout with Almonds
Ingredients
4 tablespoons butter (use more if you want more sauce)
4-6 tablespoons sliced almonds
2 whole cleaned, deboned trout, about ½ lb each (ask your butcher to debone for you, Zupan’s has them that way)
All-purpose flour
Salt
2 tablespoons lemon juice
2 tablespoons minced fresh parsley
Directions
-In a small frying pan over medium to low heat, melt 2 tablespoons of the butter & add almonds, stirring frequently until they’re golden brown.Pour nuts into a small bowl & set aside
-Dust fish with flour, shaking off excess
-Melt 2 tablespoons of butter in wide frying pan over medium heat & without crowding, add fish & cook, turning once, until fish is brown on each side & flakes readily when prodded in thickest portion with a fork (8-10 minutes)
-Transfer fish to a serving dish & sprinkle light with salt, cover to keep warm
-Add almonds & their butter to wide frying pan on low heat, stirring until heated through
-Add lemon juice & parsley, then spoon sauce over fish
Note: Since these trout are deboned, you can gently open them up so skin side is down on plate & sauce is spooned over meat of fish. If you prefer eating the skin as well, keep fish closed & spoon sauce over fish
