Potatoes Gratin
Ingredients
Clove garlic, halved
3 tablespoons butter
3 tablespoons lemon juice
6 cups water
5 large Yukon Gold potatoes (about 2 lbs)
1 ½ cups thinly sliced green onions
Salt, pepper & ground nutmeg
2 ½ cups shredded sharp Cheddar cheese (substitute with Swiss, Gruyere or a combination of Cheddar & Swiss, although I prefer Cheddar w/ perhaps a little Swiss)
2 cups half & half
2 egg yolks
Directions
-Rub a shallow 2-quart backing dish liberally with garlic, then generously coat with about 1 tablespoon of the butter using a paper towel
-In a large bowl, combine lemon juice & water.Peel potatoes & submerge in the lemon water
-Cut one potato into thin slices (use a mandolin slicer if you have one) & then arrange one layer of the slices evenly in the baking dish
-Sprinkle lightly with salt, pepper & nutmeg
-Sprinkle green onions & cheese
-Repeat this layering process until all the potatoes, spices, onions & cheese are used (approximated 3-4 layers)
-Heat half & half to scalding & pour slowly into egg yolks while blending with a whisk
-Pour half & half/egg mixture evenly over potatoes
-Dot top of potatoes with remaining 2 tablespoons of butter
-Bake uncovered at 350 degrees for about 1 ½ hours, or until potatoes are fork tender
