Roasted Cornish Game Hens
Ingredients
2 Cornish Game Hens (fresh are available at Zupan’s on W Burnside, frozen at most markets)
1 teaspoon Granulated Chicken Bouillon or Chicken Flavor Bouillon
2 med cloves garlic, pressed
2 tablespoons fresh Rosemary leaves
¼ cup of Butter (1/2 cube)
Directions
Heat oven to 350
Wash Game Hens thoroughly & cut in half, lengthwise with chef’s knife or kitchen scissors
Lay cut side down in large baking dish (4 pieces w/ 2 hens)
Melt butter in small bowl with pressed garlic & granulated chicken bouillon, mix well
Spoon butter mixture over each hen, coating thoroughly
Sprinkle Rosemary leaves evenly over each piece
Roast in over for 1-hour, basting hens at 30 & 45 minutes
(if hens are not browned enough for you, reduce roasting time to 50 minutes, & broil for 2 minutes)
