Crab Louie Salad & Dressing
Salad Ingredients
3/4 pound asparagus (discard woody ends)
Two romaine hearts, cut crosswise ½ inch thick
One English cucumber, peeled, cut in half, seeded & sliced in ½” pieces
16-20 cherry tomatoes sliced in half
4 hard-cooked eggs, cut into slices or wedges
Pitted Kalmata olives (to taste)
1 avocado, peeled, pitted & sliced thin, lengthwise
1 pound Dungeness crabmeat (can substitute ½ with claw meat)
Dressing Ingredients
1 cup mayonnaise
3 tablespoons ketchup
1 tablespoon fresh lemon juice
3 teaspoons hot horseradish
2 teaspoons Dijon mustard
1/4 teaspoon Worcestershire sauce
Salt & Pepper to taste
Directions
Step 1
In a bowl, whisk the mayonnaise with the ketchup, lemon juice, horseradish, mustard and Worcestershire sauce, then season with salt and pepper. Let stand at room temperature for 15 minutes
Step 2
In a medium saucepan of boiling salted water, steam the asparagus until just tender, about 3 minutes. Drain and cool.
Step 3
Arrange the romaine, cucumber, tomatoes, eggs, olives, avocado and asparagus on a platter. Top with large chunks of the crabmeat and serve, passing the dressing at the table.
Serves 4-6
