What should you do with your pumpkins after Halloween?
Chefs and farmers have a solution…eat your pumpkin! First of all, the seeds are packed with protein and nutrients…roasted, they’re a great salad topper or crunchy snack. The thick part below the outer skin can be cubed and used in soups and stews. Even those disgusting, stringy guts are edible. They can be used to make pumpkin puree for muffins (if you can stand to deal with them.)
You can donate them to a local farm through Pumpkins for Pigs.
Drop them off for free in Clark County. There are several locations of the We Compost Community Hub.
You can also put them in yard debris or compost them yourself. Anything to keep them out of the landfill where they’ll create a whole lot of methane.
