Quinoa Salad With Dried Cranberries & Feta
Ingredients
4 cups of quinoa, cooked & cooled (1c of uncooked= 4 c cooked)
2 green onions, finely sliced
½ large cucumber, sliced & quartered
¼ cup sliced almonds, toasted (replace w/ any nut of your choice)
¼ cup dried cranberries
1/3 cup Feta cheese, crumbled
1 cup baby spinach, roughly chopped (replace w/ arugula, cilantro, or Italian parsley)
2 Tbsp extra virgin olive oil
2 Tbsp balsamic vinegar
1 Tbsp lemon juice
Salt & pepper to taste
Directions
Toast sliced almonds in small pan on low heat
Combine cooked & cooled quinoa in large bowl w/ onions, cucumber, nuts, dried cranberries, feta & spinach
In separate small, lidded container, combine olive oil, balsamic vinegar & lemon juice; cover & shake well
Pour dressing over salad & toss well (make & use more dressing, to taste)
Season w/ salt & pepper, to taste
Refrigerate for at least an hour before serving
