K103 Listener's are sharing Comfort Food recipes, and this Indian dish is from Kokila from NE Portland, who is also a professional photographer...thus the great photo.
Ingredients:
1 tbs Ghee (Clarified Butter)
¼ tsp mustard seed
8 garlic cloves (smashed in pestle)
10 curry leaves (available at most New Seasons or Asian Grocery Stores)
2 small or 1 large tomato (chopped into small pieces)
½ tsp ground cumin powder
1 tsp fresh coarsely ground black pepper
¼ cup Cilantro for garnish (chopped)
Salt to taste - be generous for better taste
Method
Heat ghee in a wok on medium heat
Throw in the mustard seeds
As the mustard seeds begin to splutter add garlic and saute until lightly golden
Add curry leaves (tear them up to release the oils which gives it great flavor)
Add chopped tomatoes and cook for 5 to 7 minutes
Add 1 cup of water
Add ground cumin powder and ground black pepper
Add salt to taste
Bring the above to boil
Add cilantro once it comes to boil
And Tomato Rasam is ready! Drink it as soup or serve it with white rice.
