Almond Roca Cookies
Ingredients
1 cup softened butter
½ cup brown sugar
½ cup white sugar
1 beaten egg yolk
1 teaspoon Almond Extract
2 cups flour
Directions
In large mixing bowl, mix butter, brown sugar & white sugar
Beat 1 egg yolk & add to mixture along with Almond Extract & flour
Mix all ingredients thoroughly & spread on 9” X 13” short-sided baking pan, pressing dough down evenly with hands
Bake at 350 degrees for 15-20 minutes
Bring from oven & let rest for a few minutes, then melt 12 ounces of Chocolate Chips on top of hot dough & spread like icing with spatula
Sprinkle 1 cup chopped walnuts over top
Let cool completely, then into cut desired size squares (suggested 2” X 2”)
