Chicken With Beaujolais
Ingredients
1 pork shoulder steak (about ½ lb, that you will remove from bone & cut into ½ inch cubes)
3-4 lbs fryer chicken (your choice of pieces)
10 small onions or shallots (about 1 to 1 ½ inch diameter, if larger, cut in half)
½ lb small Crimini mushrooms (cleaned & cut in half)
16 oz beef broth (can or carton)
1 cup Beaujolais or other dry red wine
2 ½ tablespoons Dijon mustard
2 ½ tablespoons chopped parsley
3 teaspoons cornstarch
3 teaspoons water
Directions
-In wide frying pan, cook pork in its own far on medium heat, stirring until meat is crisp & well browned; lift meat out & set aside
-Add chicken & onions to pan. If pan is a bit dry, add 2 tablespoons olive oil. Cook uncovered over medium heat until chicken & onions are well browned on all sides (about 20 minutes).Lift our & set aside
-Add mushrooms to pan & cook, stirring occasionally, until liquid has evaporated & mushrooms are lightly browned.Lift out & add to chicken & onions (or shallots).
-Pour broth into pan, scrape browned bits free & boil over high heat for 5 minutes.
-Add wine & mustard to broth, stirring to get mustard throughout.
-Return chicken, onions (or shallots) & mushrooms to pan, bring to a boil; cover, reduce heat, & simmer for about 30 minutes, making sure meat near bone is no longer pink when slashed.
-Stir in parsley & pork & return to simmering for about 2 minutes.
-With a slotted spoon, lift out meats & vegetables & arrange on a serving dish.
-Combine cornstarch with water & whisk until blended, then add to cooking juices as you bring it to a boil, stirring constantly until juice thickens (not as thick as gravy).
-Pour mixture over chicken.
Makes 4-6 servings depending on pieces of chicken
